Grain and veggie bowls are delicious meals-in-one loaded with good-for-you-ingredients. "Bowls" are popping up on restaurant menus, food sites and magazine pages, and are fun to put together, delicious to eat. Once you learn the 3 basic steps - grain base, toppings and sauce or dressing - it's easy to improvise and use items such as leftover fish or chicken and vegetables in the fridge or garden. We’ll prepare a Mexican veggie bowl - wild rice topped with roasted sweet potatoes, corn, kale, black beans, avocado and an easy lime-cilantro sauce. Once you get the hang of making these, the combinations - and ethnic varieties - are endless.
