Knowing how to use a good, sharp chef’s knife is one of the most important and useful skills you can have in the kitchen. This class teaches knife skills so you can become faster and more efficient in the kitchen. Learn various techniques and vegetable cuts such as the julienne, roll cut, chiffonade and more. We won’t be deboning a chicken or making fancy garnishes – this is a hands-on class designed to improve everyday knife skills and to help make your time in the kitchen more enjoyable. We’ll also learn about a variety of blade shapes, practice honing and gain an introduction to sharpening. Catherine Walthers is a private chef in the Boston area and on Martha’s Vineyard where she has a teaching kitchen and gives cooking classes throughout the year. She is author of 4 cookbooks: Greens, Glorious Greens; Raising the Salad Bar; Soups + Sides; Kale, Glorious Kale.
