Should I expect to sign paperwork when I join a company as a contracted administrative assistant?

Someone is double-talking or double-thinking, listen to what You stated. You were told it would be contract at first. Which means What!! So now you are going to an interview to accept less. Here is the deal - You have something that the company "Needs or Wants" for the future of the company development and growth. Am i correct - Your answer to me and Yourself should be YES!! Have them provide you with a signed contractual agreement by both parties - stating the amount of pay you will be paid, when paid, how paid for services they want you to provide for the term of time along with the specific duties required of You. You take control of this situation by presenting them with a proposal for your services, which states i am the admin assistant that you need, want because i can and will bring the value you need in this area of your company which deals with your company growth and development. Then state that you will sign a 3 month or 6 month agreement for services. Note - You must be that "individual asset" this company cannot thrive without and You will find yourself employed for a lifetime. What do you have to lose - You have everything to gain in this matter.
