Cafe Owners, When Did You Decide to Expand or Change Your Model?

We expanded last year to a much larger location and have slowly been adding additional products. I think the real key is to really understand your market and make & perfect small changes one at a time. Increasing or decreasing in an extreme way can really backfire. If you make small changes slowly, and find the change does not improve your business the way you imagined, you will be able to fix/remove the change easier, cheaper, and are less likely to confuse your customers

Actually, I contracted my product offering several years ago and sales increased. More was not working - it was just more. Less, allowed better focus and decreased the appearance of clutter in the shop making things look more professional and that we had a commitment to what we offered.
