Which wired USB headphone with its own microphone and noise-cancelling function that works great with PC and Mac do you recommend for online video conferences, and why?

There isn't one answer for that question - size, price, etc.
The Logitech USB Headset H390 is an affordable model at $25 from Amazon.

The Jeecoo USB Pro Gaming Headset has more comfortable ear pads, but is bulkier. It's $44 from Amazon.

For wireless, the Logitech G935 Artemis Spectrum is a great option, similar to the Jeecoo wired headset. It's $200 from Amazon.

If you need USB, I would go with the Jabra Evolve2 40.  They are comfortable, have excellent noise cancelling, built in busy light to let others know you are in a conference, and a three microphone array.  This model works with both PC and Mac and is Microsoft Teams certified.  It is also UC-Certified so it will work with most any soft codecs.  we do not sells ones and twos of these headset, but if you need pricing on 5+, let me know and I will get it for you.  If you just need one for personal use, you can get it on the web.

It depends what purpose they are using it for gaming, phone calls, conferences or YouTubing?

All if these slightly different things will use a different microphone with plus or minus features and cost.

Any of the units from Sennheiser will be comfortable and sound great.   All others are a cut below except maybe the unit from JBL.   Your choice is between single and double earphone units.  The single units are a bit more low profile and may look better on cam.  They also allow you to use a phone at the same time in the other ear.   The double earpiece models are more comfortable and in my opinion sound more balanced with the sound being in both ears.  However, they do make you look a bit more like a telephone operator.   I could never get used to the sound in one ear only.  Always sounded unbalanced to me.  Maybe because I'm a sound guy.   

I am always loathe to recommend specific manufacturers or brands unless I’m entering into a contractual agreement with a client for a specific project deliverable. If I’m implementing a Citrix VDI presence, upgrading an email server or replacing a firewall, I’m going to offer my recommendations as to the specific platform my experience has taught me to be a good fit for the client’s needs, with respect to cost, ROI, scalability, etc. However, to try and answer your question, I am personally fond of the JBL Quantum line of wired USB headsets. There are multiple models at multiple price points, they offer both PC and MAC compatibility and each model offers a well documented list of features which allows the shopper to weigh the pros and cons of each and settle on a selection that fits their individual needs. Personally, I use a Plantronics with my PC.   I have not tested any with a MAC yet.   Since each person is comfortable with different styles and shapes, I would find one in the mid-range price-wise that fits your style.   Being USB, as long as the OS supports that brand and style, they all rely on drivers and thus pretty much perform the same.

I cannot wear anything that is put in the ear so all the headsets I have are over the head for both ears, although some with only one ear are just as easy to hear with.

While that is not a part of what we routinely do, I would say to look into products by Audio Technica. They make noise cancelling headphones and a wide variety of microphones. I am not certain from what you say if you want a package that is all in in one (headphone and microphone together) or if you want separate items but they have a wide variety of solutions including gaming headsets that are all in one.

For entry level, the AmazonBasics Gaming headset is a steal.  Although it doesn't have noise cancelling, the over-the-ear design is effective at reducing ambient noise.

My ears are very sensitive to headphones and I can't wear them for long. I found a great headset - Corsair VOID ELITE SURROUND. I bought it on the Newegg website: https://www.newegg.com/carbon-...  I've been on two-hour meetings without difficulty.

It works best if you connect the 3.5mm pin to the USB adapter and then connect it to your computer that way.
