in beautiful horse country, nestled in the quaint village of Middleburg, Virginia, The French Hound has decided to close its doors and reopen as French Hound Brasserie in Leesburg, Virginia.
Our new space... is bigger and accommodates more patrons, but we're still going to focus on beautiful brasserie inspired fare created to delight the palates of the Leesburg community.

John-Gustin Birkitt was born in Leesburg, Virginia...
and began life with an early interest in food. He was fortunate to spend a few summers in Europe which peaked his curiosity of the epicurean world.
John-Gustin studied at the New England Culinary Institute and moved out to Napa Valley, CA, where he worked at Bouchon, Domaine Chandon, and Brix Restaurant. Working under a number of different chefs, he quickly rose from oyster station to chef de cuisine.
In 2003 an opportunity arose to live and work in France. Sad to leave Brix but eager for France, John-Gustin and his wife, Marny, set out to tour, live and work in France. Achieving all three, they ended up in Southern Provençe on the Mediterranean.
Upon returning to the States they decided to stay on the East Coast, closer to family and friends and pursue something of their own. While considering their options, John-Gustin and Marny met David and Cricket MacDonald, who were interested in collaborating with a husband and wife team on a joint business venture. John-Gustin and Marny were asked if they had ever considered owning their own restaurant.
…and so began French Hound Brasserie
