What do you suggest to do if a client stops returning phone calls, after showing multiple apartments?

call them from another phone and do not leave a message. Text them from an unknown phone and ask is this Steve? When they answer you havd them.

You have them? And what are you going to do with them if you just tricked them into taking your call?

Just talk to them, if they dont want to rent you cant make them. You can at least find out why.
