We started making maple syrup for our family shortly after we moved to Little Farm in Naples and got our first license to sell our product in 2015. We are proud of the fact that we make syrup the "old-fashioned" way - no tubing, jugs on our own trees, small batches made by simmering the sap in a stainless steel pan, and, most importantly, no added ingredients whatsoever. We use no defoamers, sap line cleaners, filtration agents, or de-scalers. Our maple syrup is pure and simple - only (and we mean only) sap simmered until it is 66% sugar as read on a hydrometer. We discovered that each batch of maple syrup we made for ourselves was unique not only in color but also in taste - some light in color and delicate in flavor, some a lovely copper color and tasting of butter, and some rich and dark with cocoa and caramel flavors. We also discovered that most producers were making a lot of syrup and tapping a lot of trees. We wanted to keep our product small, local, and unique in taste and production method.
