(more) Online teaching really brings yoga instructors to their training toolkits for clear verbal cueing on multiple levels. There are benefits to both physical demo and student observation/ alignment teaching modes. Type and size of class will determine when and how much to use each mode; most classes benefit from a mix of both. For most of my teaching I use a single computer, but when it is useful (during some of my Restorative teacher training modules) I have used 2 monitors aimed at different angles. Hope this contributes to the discussion.
