I try to contact the customer to find out what went wrong. I then try to rectify the problem and offer something in the way of chocolate even if the complaint has no basis. Most of the time they won't respond but if you can document your attempt either on Yelp or Google people will see your good...

Try early start every year but customers are very hard to get to commit.

We are closed on Saturday and when I did open for small Business Saturday all I got was current customers taking advantage of Amex discounts.
