When I moved to Texas, one of the first things I asked the neighbors during a neighborhood block party was “can you teach me how to BBQ on a smoker like a true Texan?” After the first guy was about to finish telling me how he starts his BBQ, the next guy chimed in saying “no, no… that’s all wrong. The way you want to do it is….” This continued through the whole lot of them. What I learned was – the only right way to BBQ is YOUR way to BBQ. So, my adventure began.
Over the course of the past 12 years, I have honed my skills, developing my own rubs, my own processes and my own styles. Now that I have retired from Federal service, I am finally free to pursue my passions – BBQ... and COFFEE!
I was coming in from putting a round of ribs on the smoker to make a batch of coffee when my wife joked and said - you should just smoke your coffee. We both laughed, and then I said - that's a great idea! She rolled her eyes, but I accepted the challenge.
Sixty pounds of coffee later, I had finally perfected a way to add just the right amount of smoke to coffee beans. The result is a full-bodied coffee with a smooth, almost sweet taste. We also happily discovered that smoke, if added correctly, even takes the bitterness out of the coffee.
We now offer a medium and a dark roasted cherry wood smoked coffee and a plum wood smoke coffee that each have their own distinct flavors. Try them all and see which one you like best.
