scent or odors do matter as they play on your customers brain as to determine sense of matching what they expect. Examples are if you walk into a body shop it smells like different mix of scents. In a dentist office you smell antiseptic or light bleach - therefore giving you the sense of sterile environment. If you smell mildew or off putting smells - customers will deter from going further. It all really boils down to the environment you are trying to set and what you are doing for a business. you can't control all of the smells carried by your products however you can over tone the environment with smells that you want to give in order to gain sales.
I did an experiment when I was working in a nightclub at a college bar. We used a smoke machine/fogger which gave a kind of chalk like smell. It blended in with the smoke from smokers (Back in the day). we introduced a black licorice additive to the smoke machine and we did not change anything by virtue of announcing or setting up people. However the result led us to an increased sales of Sambuca which is the black licorice tasting liquor by 25% for the night. We would sporadically introduce this and it worked every time.
