I think that it is situational. I take the time to vet my referrals because I want them to be intelligent and beneficial, and not a waste of anyone's time. I think that has value and I think a percentage, performance based, is a fair deal to everyone depending on the value and type of referral. A loan or investment, for example, would require a percentage. So and So's has the best steak in town would not. When it's not about money it can be about helping or about building influence. If you're not in the business of referrals then I think looking at each individually is the way to go. This way you can personalize your thank you. You many want to reciprocate, pay them, give them a gift, take them to dinner, or whatever you think might work. The only truly wrong answer would be to not do anything.
Listen to your heart. Coaches, blogs, media, competitors, peers, etc will try to pull you in all sorts of directions. Hear what they have to say but in the end, do what speaks to you.

Different strokes, different folks. What is easy for one is a mountain for another. I think the most important thing for losing weight is learning how to eat healthy. At home, when out, on a budget, in a hurry, etc. Knowledge is the first and most important component. The best exercise?...

Business is extremely personal. You invest the majority of your time into building something you've dreamt about. You put your personality into it. How could that not be personal?

There are a number of factors that can affect the answer to this question.

Have them pay by credit card instead of check? Saves time for everyone involved. Like a hotel, you could put a hold on a specific amount of credit until the job is complete.
As others have said, offer an incentive to pay on time. This is better than a penalty for paying late because it approaches the issue from a positive angle rather than a negative one.
Do not release your final product until they've paid.
Drop in and talk to them about the product after you've released it. Ask them if they are satisfied. Enjoyed the process. If they had questions or suggestions. Etc. This might help change the dynamic to put them in a position of wanting to pay you.
Good luck. I work with a lot of companies that are start ups or struggling to gain a piece of the market. Getting paid is sometimes half the job. Sometimes the legal avenue is the only option left to you. There's all kinds of people out there.

I prefer evenings because there is generally more time to network and people are more relaxed and open to conversation.

Best experience I had with a salesperson when I said "Just looking" was, "Excellent! This is how we're set up. These are here, these are there, these over there and those over there. If you need any help, I'll be over here. My name is ..." I felt no pressure and I immediately liked her. When I had a question, I knew where to find her and felt comfortable asking her. I've always hated it when a salesperson is on you right away and you want space, or when you need them, they aren't anywhere to be found. Helpful not pushy. Friendly, not salesy.

I love people and the most satisfying thing about my business is that I get to meet a lot of people and hear about things I might never experience myself.
I also get to see a bigger picture of the economy through their eyes.
And yes. Knowing that I was able to help someone with their goals and solve some of their problems is satisfying.
It also affords me plenty of opportunity to learn about new business and industry, help with concept to reality, and see what's just around the corner.
