Hello Robin,
I am not sure I am the best person to answer, although I do work with the Cancer Well-fit Program non-profit. Since you don't need to raise very much, a silent auction would probably be fine. You could charge ticket prices for a dinner and have donated items that people bid on. You could probably get the food and drink donated as well, or for a minimum price.
