Catering serving fresh local and lively food from the best of Boulder County to you personally designing each menu for each event :) We have been catering since the middle 80's under different names starting with Charlottes, Silvershredders, Bumper Crop and now Fresh Catering ;)
How We Got Started
Started off as a food booth at the Boulder County Farmers Market selling Tacos and burritos off of a BBQ in the early 90's along with a lunch counter in the Boulder Medical Center serving farm to table food to all of the doctors and nurses ;)

My business partner at the time and I were driving home from our very first food truck gig, we had killed it and sold $1500 that night and we had a wedding we were catering the next day and all the food for the wedding plus the left over food for that evening was in our fridges on our food truck, we were driving down the highway at about 10:00 PM on the highway between Golden and Boulder, highway 93, and a deer jumps out in front of us : ( my partner was driving and swerved to miss the deer at 50 miles an hour pulling a 20' trailer and we fishtail it down the highway until we are completely turned 180 degrees and facing the other way and a flat tire on the trailer and all the food all over the inside of the trailer : (Β Nothing much else was wrong with anything else, luckily, I wasn't even wearing a seatbelt, and we survived and from that point on we realized that you don't need to handle everything with kid gloves and it will all just turn out all right after all Β ; ) Keep on moving forward and work as hard as you can with the utmost of integrityΒ : Β )

Hire a marketing/sales person, no money up front or a paycheck, only pay commission and industry standard is 5% - 8% of sales. Figure out your niche, are you a corporate caterer, are you a wedding caterer etc... and then have that marketing/ sales person...

Figure out your niche, are you a corporate caterer, are you a wedding caterer etc... and then have that marketing/ sales person concentrate on that market. This is a type of position that you could potentially hire a college student for, you also might be able to pay less if you do hire a college student. Once you have enough business in your niche market then go after the next niche market and so on until you reach your desired sales. This is a perfect part time job for a student that could potentially make $80,000/year if they drive your sales up to a $1,000,000/year

Try sourcing out local festivals, farmers markets and other social gatherings with food trucks, and slowly build yourself a food cart/truck/trailer that you can use and you can also use for catering as your support vehicle. In some areas the local breweries need food and not all but some of those...

Try sourcing out local festivals, farmers markets and other social gatherings with food trucks, and slowly build yourself a food cart/truck/trailer that you can use and you can also use for catering as your support vehicle. In some areas the local breweries need food and not all but some of those places do enough business that you as a food vender will also do some business but that is a hit or miss so choose carefully. I have found that with the cart/truck/trailer as your advertisement vehicle that business just starts to fall your way, of course you need to be spot on with your food and service, but the end result for us was that our 2nd year in business we were on track to do 25 weddings which is where you make all your money, keep in mind that food cart/truck/trailer is mostly for advertising so don't spend to much time or money on it, of course make it look good and clean and inviting ;)Β

With catering you are asked to do all kinds of different foods and styles of food and what you need underlying all this is a signature style or theme about your food ;) For me this style is Southwestern, I put red and or green chili in all my cooking and then that is what you become known for;)...

What you need to realize is that you need to sell $1000 each time you go out, so first only accept events that you will do those kinds of numbers, like farmers markets and fairs. The second thing that you need is to be able to handle that kind of business, so you need a menu that allows you to be super fast, the fastest food truck gets all the business. The other thing that you need to do is go after private events, for example we connected with a commercial real estate agent and about once a month he would feed all the employees in one of the buildings that he managed and we would feed 250 people over the course of a couple of hours, once again we were super fast and served tacos that were already hot and just needed to be plated ;)

I charge accordingly and also pay my help as if a tip was added, I am a small business and pay my help $30/hr and only need a couple of people helping every now and then. I also have help that I donβt have to babysit and they...

I have tried a few things for tastings;) I have tried charging a nominal fee and on up to offering to do a dinner party for cost of doing food and the only thing that would work is a free tasting ;)

I am in the process of branding myself, creating a niche at what I am good at, I can cook just about anything but I have come to realize that is not a brand, so I am trying to create a market for what exactly I like to cook which is southwestern cuisine and I am just trying to stick to that and see if it will help ;)
