We like to get our vehicles in and out in one day, that is always the goal. However, sometimes due to the extent of the work or waiting for parts that have to be shipped it takes longer. We give the customer a reasonable amount of time to collect their vehicle and pay, if that doesn't happen then...

We like to get our vehicles in and out in one day, that is always the goal. However, sometimes due to the extent of the work or waiting for parts that have to be shipped it takes longer. We give the customer a reasonable amount of time to collect their vehicle and pay, if that doesn't happen then we begin charging a daily storage fee. If that doesn't get them to pay, we place a mechanical lien on the vehicle so we can get at least some of our money back.
"This is how much the work will cost you, we can get the parts in a matter of minutes and have your car ready today before 5...would you like for us to go ahead and get started?"Of course, we only say this when we know for sure we can have their vehicle ready as promised.

I let them know that we have thoroughly diagnosed the situation with their vehicle and go straight ahead with telling them our findings. I always try to be as empathetic as possible as no one likes to hear bad news.
