For me it depends on what you are responding to.

If sending a quote or proposal I prefer sending a letter with detail explaining the proposal. It's more professional and looks like you've put more time into the preparation.

On the contrary, a postcard is preferable for when sending a Thank you, an acknowledgement of receipt, or a word of encouragement.
