Hi Rachael, Sounds like you've been hard at work. I hope you have a successful launch! I'm not sure how to determine shelf life, but one thing we do to ensure freshness, even though our product has a 12 month shelf life, is to keep a really tight inventory so we're never sending out food that is past 80% of it's shelf life. So we're normally able to move it all within a month. In other instances with treats that we've test marketed we've simply kept them in zipped up bags in our cabinets and kept an eye on them. Not too scientific, but it'll give you a gauge of how long things will last, which will help you determine how many to make at one time. Our motto: start small, think big! Best of luck to you.
