I prefer either granite or quartzite.  Both are extremely durable in a kitchen.  Marble is pretty, but more porous.  It does not work well around oils, acids and red wine.  The newer contemporary quartz materials are really nice.  However, they are not all the same.  They are made with real crushed stone and resin.  The resin is not as heat resistant as real stone.
