There can be lots of reasons that led to getting a great client such as
Word of Mouth
client referral or someone attending an event that meets you in person
rarely do you get them through cold calling.

There's several things that can draw me to a booth it could be how it's displayed it could be the interaction that the person in the booth is having with me when I'm walking by it could be something that they're offering even as a free sample or it could be of interest to me just by the signage...

I always add it to the bill I charge no gratuity or less gratuity if it's a fundraiser. Always works for me. Sometimes the client will actually add more to the gratuity.
