Great question. Till AI, Machine Learning and Natural Language processing became common-place you had to depend on analysis of the data in a very limited way. Now you have the ability to continue to build on the model of who is your right customer even if circumstances change and the customer profiles change you will be able to get the data you need to make changes. We have been building a model of our customers based on the vertical, their revenue, location, propensity to spend and creating models around which product is the right fit for them and predict their life cycle.
On the Sales side, using tools like Outreach.io, Otter.ai (app) to transcribe conversations and get keywords from conversations.
Still a lot of development but excited with the results of using AI.

The best thing is that as a business owner you don't have to do anything different for voice search but make sure you have a web presence with structured data and integrated web presence. For example, I have a Alexa show that has a screen. The results for local business come from Yelp. I see some business show up without a profile photo. Google is coming up with it's own smart assistant Google Smart Display. To answer your question all age groups will use it because it will become convenient. Of course my son talks to Alexa and Google more than he talks to us :)
