Hello. Our society tends to function in absolutes (black and white) instead of striving for a more comfortable gray. If common courtesy was more of a goal in our society then perhaps this item and others wouldn't even be a topic. If you think it is wrong to take a call during a meeting, then it probably is wrong. Chances are the world will keep spinning until after the meeting. And the right social behavior starts with the young. My daughters behave well in public because I explained to them why it is important to do so. And as they turn into young adults, they automatically would know not to take a call in a meeting.
It has everything to do with wording. Your initial proposal to the customer must be specific on the scope of work and the payment schedule should be fair to all parties...not just the client. Change orders should be clear (like initial proposals) and I usually collect at least half on change...

Change orders should be clear (like initial proposals) and I usually collect at least half on change orders before start. If the change order is really small, I request full payment up front. If you are a professional, doing this should never create guilt. If you do your job properly, you should be paid...properly. But it starts with being proactive...rather than reactive.
