Pop up dinner sounds intriguing- do tell! 

Years ago, Food Network chef, Tyler Florence, went to town regarding laws against street food vendors. You might want to research what he was able to accomplish in Colorado and/or across the states.  In some jurisdictions, the law would not allow a food vendor to sell against lawful restaurants in the neighborhood.  There was also a regulation that the vendor had to purchase a location (like big city cab/taxi outfits), and that the trucks had to conform to laws that make no sense given the nature of traveling food truck (the 3 sink rule, etc.) that offer no in-store dining (all take away for customers on the run and using only paper/plastic dinnerware).  The cities and counties made additional laws that forbid these vendors to serve on govt properties, so you can't buy hot coffee and a breakfast burrito while at the dog park, for example.

There seems to be an underground push from the over reaching deep state to undermine all things individual or "cottage industry" and allow only big-name chain stores to lead us all into the future.  Yeah, so much for all that diversity and convergent thinking!  B-a-a-a-h (sheep noise).

A pop-up dinner is a dinner that a Chef or restaurant hosts but not necessarily in their own establishment. Somes times they will do it in their own restaurant but do a set menu that is not what is on the usual menu. We have heard of some people holding them in homes, and event space. But we have also heard of people using less conventional spaces outdoors or warehouses and barns that are not necessarily event spaces and this type of thing is more our speed.
