I prefer email and phone. I hate texts except for things like "on my way". My first contacts are almost always via email but I also insist on a short chat via phone before booking a client.
Meeting face to face is always a great way to create and keep lasting relationships. As far as getting to the ordering process email is invaluable to correspond and document the details. My ONLY pet peeve is when sending detailed emails folks sometimes "speed read" and fill in the blanks in their minds which can create potential issues down the line. For this reason, I make a point of "restating" the details in followup correspondence and getting them to confirm so that we are on the same page.
I like what @venassia said. Most times I will start the conversation on whatever medium the customer used to initiate contact. From there once a rapport has developed or service is imminent then I prefer to move to email for discussion of details and ordering purposes so that I have the ability to search, save, organize, and template parts of my conversations. Face to face trumps all of that so whenever possible I like to meet the client before work begins.
