For over a year I have had a cook shortage. I am struggling to find someone that can manage simple tasks as a line/prep cook. I offer a decent wage with incentives but either my applicants are over qualified or have not idea what they are doing. This is my challenge.

I am the owner/operator of my restaurant Whiskey Six BBQ. Since March 2020 we have adapted and had success not only in the restaurant but with our catering division. Our take out business has gone from 10% to 90% of restaurant sales. Fortunately BBQ travels well in packaging so our take out customers are happy. When it comes to catering, our wedding revenue dropped by 80% but our corporate catering sales grew. It is all about developing, learning, adapting and listening during these tough pandemic times.

Since I started Whiskey Six over 5 and half years ago, we have relied on Events and Catering as the main source of revenue. It accounts for 80%. Up till the pandemic this division has been solid. Then COVID hit and 26 weddings and a dozen other events were postponed or cancelled. Over the summer we were able to cater a few small and safe weddings and we do have a bit of corporate lunch business but our catering sales are down by 80%. With the restaurant set up as 50% capacity for social distancing, it makes it very tough to be successful. Since we do still have revenue coming in we will make it past this and flourish in 2021.

Yelp sells all of it's services. It is great for the basics as a business like providing business hours and menu information. Unfortunately it is an expensive tool to use as marketing.

This is dangerous door to open. With most cases people get food poisoning at home. It takes a lot of research and proof to determine where they became contaminated. This could be very damaging to a restaurant or food business if there was a false claim.

The biggest issue with staff in the food and beverage industry is finding loyalty and skilled people to do their jobs. It has nothing to do with age but with attitude. No matter how many incentives are offered, most people in F&B will jump to the greener grass on the drop of a dime.

I understand your situation Melody. Coming from a prairie city like Calgary it was the same. Now that I am in Vancouver it is much easier to locally source all year round with seasonal ingredients. At least in snowbound areas you can use a lot of preserves and pickling.

The signs are apparent when a business relationship is not working out. For example their level of service or quality diminishes. In the food and beverage business this happens a lot. Just today I am trying to get my plumbing repaired by the third party of one of my vendors who broke the water line when a coffee machine was being taken out. Now my relationship is over with the coffee vendor since they will not accept responsibility. This is a prime example.
I couldn't agree more with Pat. I have joined the Entertainment Coupon Book program for my restaurant and I deeply regret it. It has attracted nothing but customers who only drink water and do not tip my servers properly on the original amount. If these programs brought back regular customers I...

I couldn't agree more with Pat. I have joined the Entertainment Coupon Book program for my restaurant and I deeply regret it. It has attracted nothing but customers who only drink water and do not tip my servers properly on the original amount. If these programs brought back regular customers I would be 100% for Groupon, etc. but it is damaging to those who work very hard to buy, prep, cook, serve and manage/own.

As a restaurant and catering company it is a daily grind. The food business is competitive. It takes a few years to really see growth. My catering company has been running for 3 years now and the restaurant for 7 months. My definition of success in this business is to be able to have longevity. The fact that I have made it this far mean success. Financial success will follow soon I hope but it is HARD work.
